Ceylon, Malabar and Indonesian cinnamon in Alba, Continental and Cassia grades.
Ceylon cinnamon (true cinnamon) is soft, easily crumbled, and what regulatory bodies in several markets now require to be labeled distinctly from cassia — check your destination market's labeling rules if this distinction matters for your business. Malabar and Indonesian lines are cassia varieties: harder, more pungent, and considerably higher-volume globally because they're cheaper to grow and ship.
Alba grade is the finest Ceylon quills, hand-rolled and priced accordingly; Continental grade is standard commercial Ceylon; Cassia covers the Malabar and Indonesian lines. Confirm which you need — true cinnamon and cassia are not interchangeable for buyers with labeling obligations.
Grades available
- Alba
- TThis is the highest quality and most expensive grade of cinnamon, which consists of the inner bark of the Cinnamomum zeylanicum tree. It has a light color, delicate texture, and a sweet, subtle flavor.
- Continental
- This grade of cinnamon is obtained from the outer bark of the tree and is darker in color than Alba. It has a stronger, more pungent flavor and is commonly used in baking and cooking.
- Cassia
- This grade of cinnamon is obtained from the bark of the Cinnamomum cassia tree and has a darker color and thicker bark than Alba and Continental. It has a more intense, spicy flavor and is commonly used in savory dishes and hot beverages.
Varieties available
- Ceylon cinnamon
- This variety of cinnamon is native to Sri Lanka and is also known as true cinnamon. It has a delicate, sweet flavor and a light color.
- Malabar cinnamon
- This variety of cinnamon is native to the Western Ghats region of India and has a darker color and a stronger, more pungent flavor than Ceylon cinnamon.
- Indonesian cinnamon
- This variety of cinnamon is also known as Padang cassia and is grown in Indonesia. It has a thicker bark and a more intense, spicy flavor than other varieties of cinnamon.
