Zanzibar cloves carry the reputation most buyers associate with premium clove — high oil content, strong aroma — and Madagascar runs close behind on quality at a generally lower price point. Malabar, Penang and Indian origin lines are more commodity-grade, suited to bulk grinding and food-manufacturing use where oil content matters less than cost.
Grade A is sorted for whole-bud appearance and oil content; Grade B is priced for buyers grinding rather than selling whole cloves.
Grades available
- Grade A
- This is the highest quality grade of cloves, with a uniform size, shape, and color. They are also free from defects and have a sweet taste.
- Grade B
- This grade of cloves, may have some minor defects such as discoloration or uneven sizes, but they are still suitable for use in baking and cooking.
Varieties available
- Malabar
- This is the highest grade of cloves available and is characterized by its large size and strong, sweet aroma. It is grown in the Malabar region of Kerala and is highly prized for its quality.
- Zanzibar
- This is another high-quality grade of cloves that is grown in Zanzibar but is also available in India. It has a strong, pungent flavor and is commonly used in Indian spice blends and pickles.
- Penang
- This is a variety of cloves grown in Penang, Malaysia, which has a milder flavor and aroma than the Indian and Zanzibar varieties. It is commonly used in Malaysian and Indonesian cuisine.
- Madagascar
- This is a variety of cloves grown in Madagascar, which has a strong, spicy flavor and aroma. It is commonly used in African and European cuisine.
- Indian
- This is a lower grade of cloves that is smaller in size and has a milder flavor and aroma than the higher grades. It is commonly used in Indian cooking and is more affordable than the higher grades.
