Poppy Seeds

White poppy seed is the variety most South Asian cooking calls for, used both whole and ground into paste for gravies. Blue (sometimes called black) poppy seed is the variety Western bakeries use for bagels, cakes and pastries — the two are not substitutes for each other despite the shared name.
Origin affects flavor and oil content more than grade does with poppy seed: Afghan and Turkish stock tends to run higher in oil content than Indian; tell us which you're used to sourcing and we'll match it.
Grades available
- White poppy seeds
- These are the higher quality poppy seeds and are often used in desserts and confections. They have a sweet, nutty flavor and a creamy white color.
- Blue poppy seeds
- These are a lower grade of poppy seeds and are typically used in savory dishes. They have a more bitter flavor and a bluish-gray color.
