
Star Anise
Chinese, Indian, Japanese, red-brown and green star anise, Grade A or B.
Chinese star anise is our highest-volume line — the culinary variety used globally in cooking and, for pharmaceutical buyers, as a source of shikimic acid in antiviral manufacturing. Indian star anise is a smaller regional line with a milder aroma. Color is the quickest visual grade indicator: red-brown pods are fully matured and standard for export; green pods are harvested earlier and less common in our stock.
Grade A is whole, well-formed pods for retail and culinary use; Grade B carries more broken pods and suits extraction or grinding.
- Grade A
- This is the highest quality grade of star anise , with a uniform size, shape, and color. They are also free from defects and have a sweet taste.
- Grade B
- This grade of star anise may have some minor defects such as discoloration or uneven sizes, but they are still suitable for use in baking and cooking.
- Chinese star anise:
- This is the most common variety of star anise and is widely used in Asian cuisine. It is also used to make the drug Tamiflu.
- Indian star anise
- This variety of star anise is slightly different from the Chinese variety and has a stronger flavor.
- Japanese star anise
- This variety of star anise is not commonly used in cooking, but it is often used in incense and soap making.
- Red-brown star anise
- This is a higher grade of Chinese star anise, which is known for its deep red-brown color and strong aroma.
- Green star anise
- This is a lower grade of Chinese star anise, which is known for its lighter color and milder flavor.
