Pecans in five grades and five U.S. cultivar varieties, halves through pieces.
Desirable and Stuart are the larger, more uniform cultivars bakeries ask for when a recipe calls for visible pecan halves; Elliot, Pawnee and Western run smaller and are priced accordingly for pieces and chopped applications. Fancy and Choice grades are cosmetically cleaner halves; No. 1 and No. 2 grades are for buyers processing further rather than selling whole.
Pecans are seasonal — U.S. harvest runs October through December — so lead times can shift depending on when in the crop year you're ordering. Ask your trade desk contact for current availability before committing to a ship date.
Grades available
- Fancy
- The highest grade of pecans, with a uniform light color and no defects.
- Choice
- The second-highest grade of pecans, with a slightly darker color than fancy and a few minor defects.
- Standard
- The third-highest grade of pecans, with a darker color and more defects than choice.
- No. 1
- A lower grade of pecans that are still suitable for use in baking and cooking.
- No. 2
- The lowest grade of pecans, often used for making pecan oil or animal feed.
Varieties available
- Desirable
- A large, sweet variety of pecan with a thin shell.uniform color, size, and shape. Supreme pecan nuts are commonly used in gourmet recipes, as well as for snacking.
- Elliot
- A smaller variety of pecan with a thick shell and a rich, buttery flavor.
- Pawnee
- A medium-sized pecan with a thin shell and a sweet, mild flavor.
- Stuart
- A large, meaty pecan with a thick shell and a rich, buttery flavor.
- Western
- A variety of pecan that is commonly grown in Arizona and California, with a mild flavor and a thick shell.
