Pistachios from Extra Large through Small, across Kerman and three Iranian varieties.
Kerman is the variety most buyers picture when they think pistachio — large, well-split shells, consistent kernel color — and it's what we carry the deepest stock of. Ahmad Aghaei, Akbari and Badami are Iranian varieties with their own following among buyers who know the category well, generally at a different price point than Kerman.
Size grading runs Extra Large through Small by shell count per ounce; larger sizes command a real premium for retail and gifting use, while Medium and Small grades are what most confectionery and ice cream manufacturers actually buy.
Grades available
- Extra Large (XL)
- This grade of pistachios is the largest in size and has the lowest number of pistachios per ounce. They are generally the most expensive.
- Large (L)
- This grade of pistachios is slightly smaller than the XL grade but still has a low number of pistachios per ounce.
- Medium (M)
- This grade of pistachios is the most commonly sold in India. They are medium in size and have a moderate number of pistachios per ounce.
- Small (S)
- This grade of pistachios is slightly smaller than the XL grade but still has a low number of pistachios per ounce.
Varieties available
- Kerman
- This is a popular variety of pistachios that is known for its large size, long shape, and pale green color. It has a slightly sweet taste and a soft texture.
- Ahmad Aghaei
- This variety of pistachios is smaller in size than Kerman but has a higher yield and a more intense flavor. It has a dark green color and a round shape.
- Akbari
- This variety of pistachios is large in size and has a long shape. It has a distinct flavor and a pale green color.
- Badami
- This variety of pistachios is smaller in size and has a reddish tint to its shell. It has a slightly darker color, but is known for its rich, nutty flavor.
